Do you find it hard to come up with quick after-school snacks that your kids will actually enjoy? We know how hard that can be! That’s why we created these easy avocado hummus snack-size quesadillas! They go together in minutes, and we know your little ones will devour them as soon as they walk in the door!
1. Cut Out Tortillas
To start, grab a circle cookie cutter and cut 3 circles out of each tortilla. You can also use a jar, or anything sharp you may have on hand.
2. Spread Hummus
Next, spread your hummus on each tortilla circle. If your kids like a little spice, try out the spicy hummus. It adds just the right amount of kick without being overly spicy. Add your avocado slices to each tortilla on top of the hummus.
3. Add Cheese and Cilantro
Crumble your queso fresco and cilantro to finish off your quesadillas. Make sure you get enough cheese on there to really get it melty and creamy.
4. Cook Quesadillas
Fold the quesadillas in half, then place in a pan over medium heat until golden brown. Now they’re ready to serve! Don’t hesitate to have some Crazy Fresh Pico de Gallo or Guacamole as dipping sauces! These quesadillas are also a fun way to get your little ones helping out in the kitchen.
