Avocado Sweet Potato Noodles

October 6th is National Noodle Day, so what better way to celebrate than with our Avocado Sweet Potato Noodles recipe? This creamy, decadent meal is the perfect fall dinner everyone can enjoy!

Our Sweet Potato Noodles make this meal even easier to make, as there’s no prep involved! The noodles are ready to be thrown directly in the pan, and they only take about 5 minutes until ready to devour!

Did you know we also have Butternut Squash Noodles? You can easily substitute them in this recipe if you don’t like the taste of sweet potato. Both are great for autumn. Which one do you like more?

Ingredients

  • 1 avocado

  • 1 jalapeño

  • 1/2 cup pumpkin seeds

  • 1/2 cup cilantro

  • 1 clove garlic, minced

  • 2 limes, juiced

  • 3 tablespoons olive oil

  • 1 cup water

  • 1/4 teaspoon salt

  • 2 containers Crazy Fresh Sweet Potato Noodles

Directions

  • Toast the pumpkin seeds in a pan over medium heat until they pop, about 3-5 minutes. Set 2 tablespoons of seeds to the side, and use the rest to make the sauce.
  • Add pumpkin seeds, avocado, jalapeño, cilantro, garlic, lime juice, olive oil, water and oil to a blend. Blend under smooth.
  • Heat olive oil in a pan over medium heat. Add sweet potato noodles to the pan and season with salt. Cook until al dente, about 5 minutes. Do not let the noodles cook any longer, or they will become too soft. Continually toss while they are cooking.
  • Squeeze half a lime over the noodles, and toss with 6 tablespoons of the avocado sauce. Serve with cilantro and extra pumpkin seeds.
