Bite-Size Stuffing Muffins
Stuffing is such a classic Thanksgiving side dish. Now you can make it into bite-sized pieces with our yummy stuffing muffins recipe. It’s especially perfect for those little hands at the dinner table.

Olive oil spray
12 ounces whole wheat French bread, cut into small cubes
3 ounces pancetta, diced
1 tablespoon butter
1 container Crazy Fresh Stuffing Mix
2/3 cup Crazy Fresh Parsley, chopped
10 Crazy Fresh Sage Leaves, chopped
3/4 teaspoon Bell’s Seasoning
1/4 teaspoon salt
1 large egg, beaten
1 3/4 cups chicken broth
Directions
- Let bread sit out overnight to dry out.
- Preheat oven to 375º. Spray a muffin tin with oil.
- Heat a large skillet over medium heat, and cook pancetta until browned, about 3-4 minutes.
- Add butter, stuffing mix, parsley, sage, Bell’s and salt. Cook until soft, about 8-10 minutes. Let cool, then mix with bread.
- In a medium bowl, combine chicken broth and egg. Add to bread mixture, and let sit.
- Fill muffin tin with mix, and cook for 25 minutes.
