Eloté, also known as Mexican Street Corn, is freshly grilled sweet corn smothered in a delicious mayo and cheese mixture. Great for summer!

Ingredients

  • Crazy Fresh Riced Cauliflower

  • 2 eggs

  • 1 cup shredded cheddar cheese

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/8 teaspoon garlic powder

  • Parsley for garnish

  • Buffalo sauce for dipping

Directions

  • Preheat oven to 350º.
  • Microwave riced cauliflower for 3 minutes to soften.
  • Mix riced cauliflower with eggs, cheese and seasonings.
  • Portion out the mixture into a greased muffin tin.
  • Pack lightly, and bake for 20 minutes.
