Cauliflower Buffalo Tots
Eloté, also known as Mexican Street Corn, is freshly grilled sweet corn smothered in a delicious mayo and cheese mixture. Great for summer!

2 eggs
1 cup shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
Parsley for garnish
Buffalo sauce for dipping
Directions
- Preheat oven to 350º.
- Microwave riced cauliflower for 3 minutes to soften.
- Mix riced cauliflower with eggs, cheese and seasonings.
- Portion out the mixture into a greased muffin tin.
- Pack lightly, and bake for 20 minutes.
