Chocolate Pom-Pom Cupcakes

1 box chocolate cake mix
1 cup pomegranate juice
1/2 cup vegetable shortening or butter, room temperature
2 cups powdered sugar
1/2 teaspoon salt
1 tablespoon milk, if needed
1 container Crazy Fresh Pomegranate Arils
Directions
- Bake cupcakes according to the instructions on the box. Set aside.
- Put the pomegranate juice into a small saucepan over medium-low heat. Let the juice simmer, uncovered, until it has reduced to about 1/4 cup (about 20 minutes). Remove the reduced juice from the heat, and let it cool completely before continuing.
- Beat the shortening or butter on medium speed until it’s light and fluffy. Turn the mixer down to low, and gradually add the powdered sugar and salt. Continue beating the frosting until smooth.
- Add the reduced pomegranate juice and turn the mixer up to high. Beat the frosting for a few minutes until it’s very smooth and fluffy, adding a bit of milk if necessary to reach the desired consistency.
- Pipe frosting onto each cupcake. Top each with a tablespoon of pomegranate arils.
