Cucumber Mint Sorbet

If you have an ice cream maker at home, then this is a recipe you’re going to want to try! The flavors of cucumbers and mint make this sorbet a refreshingly light dessert.

Ingredients

  • 2 pounds cucumbers, frozen

  • 2sprigs Crazy Fresh Organic Mint

  • 1 tablespoon Crazy Fresh Lemon Juice

  • 3 cups sugar

  • 3 cups water

Directions

  • In a medium saucepan, bring the sugar and water to a boil. Stir on medium-high heat until the sugar dissolves, then reduce the heat to low and simmer for 3-5 minutes. Pour syrup into a bowl, and let it completely cool.
  • While the syrup cools, peel and dice the cucumbers. Place them in a large food processor, along with the mint leaves and lemon juice. Pulse until liquified.
  • When the syrup has cooled, add the cucumber liquid to the bowl and stir to combine. Transfer the mix to a VERY cold ice cream maker, and turn the machine on and let it run for about 40 minutes, or until you get a smooth, icy sorbet consistency.
  • Transfer bowl to a freezer until ready to eat. Garnish with mint leaves.
