Directions

  • Preheat oven to 400º.
  • Add 2 tablespoons oil to Brussels sprouts. Lay out on a sheet tray, and bake for 20-25 minutes.
  • While the Brussels are baking, coat your chicken breasts in egg.
  • Dredge each breast in Parmesan, and sauté in a hot pan for 5 minutes on each side.
  • When the Brussels are finished, put them on a plate with a chicken breast on top.
  • Top with a dollop of guacamole to finish.
