Maple Balsamic Roasted Asparagus

3 containers Crazy Fresh Asparagus Meal Mates
1 teaspoon olive oil
1 tablespoon balsamic vinegar
2 tablespoons maple syrup
Salt and pepper to taste
1/4 cup crumbled feta cheese
2 tablespoons dried cranberries
2 tablespoons roasted pumpkin seeds
Directions
- Preheat oven to 450º. Line a baking sheet, and spray with non-stick spray.
- In a small bowl, whisk together oil, balsamic and syrup.
- Arrange asparagus on the pan, and season with salt and pepper.
- Drizzle with vinegar mixture, and toss lightly to coat. Roast until crisp, about 7-10 minutes.
- Meanwhile, toss feta, cranberries, and pumpkin seeds together.
- Arrange asparagus on platter, and top with feta mix.
