Ingredients

  • 3 containers Crazy Fresh Asparagus Meal Mates

  • 1 teaspoon olive oil

  • 1 tablespoon balsamic vinegar

  • 2 tablespoons maple syrup

  • Salt and pepper to taste

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons dried cranberries

  • 2 tablespoons roasted pumpkin seeds

Directions

  • Preheat oven to 450º. Line a baking sheet, and spray with non-stick spray.
  • In a small bowl, whisk together oil, balsamic and syrup.
  • Arrange asparagus on the pan, and season with salt and pepper.
  • Drizzle with vinegar mixture, and toss lightly to coat. Roast until crisp, about 7-10 minutes.
  • Meanwhile, toss feta, cranberries, and pumpkin seeds together.
  • Arrange asparagus on platter, and top with feta mix.
