Mini Fruit Tarts
These easy, mini fruit tarts are perfect for the holiday dessert table. A sugar cookie cup filled with cheesecake and fresh berries is something we think everyone can enjoy!

24 break & bake sugar cookie squares or one roll of sugar cookie dough
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
6 ounces limeade concentrate, thawed
1 tablespoon cornstarch
1/4 cup sugar
1 container Crazy Fresh Triple Berry Blend
1 container Crazy Fresh 5 Fruit Blend
Directions
- Preheat oven to 350º. Spray mini muffin tins with non-stick spray.
- Place on cookie dough square, or 1 tablespoon, in each cavity. Bake for 12-16 minutes. Cool before removing.
- Make glaze by adding concentrate, cornstarch and 1/4 cup sugar in a small saucepan. Cook until it thickens. Cool.
- Make filling by beating cream cheese with sugar and vanilla until smooth.
- Spoon about 1 tablespoon of filling into each cookie cup. Top with fresh berries. Brush with lime glaze.
- Serve within 3 hours.
