  • Whisk the half and half, eggs and diced peppers in a bowl. Set aside.
  • Fry the bacon in a large skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain, then break into 1/2″ chunks. Reserve one tablespoon of the clear, rendered bacon fat, discard the rest, and carefully wipe out the warm skillet.
  • Add the bacon fat back to the skillet, and cook the onion over medium heat for 4-5 minutes or until tender. Set aside.
  • Scatter the cheese on the pie shell, then top with the bacon and onion. Slowly pour the egg mixture over the bacon mixture.
  • Bake at 350º for 30-35 minutes.
  • Let sit for 5-10 minutes before serving.
