Scotch Guac

We made a twist on Scotch Eggs with our Scotch Guac. Imagine a meatball stuffed with creamy guacamole. Yum!

Ingredients

  • Crazy Fresh Authentic Guacamole

  • 2 pounds ground beef

  • 1/3 cup marinade

  • Marinade Ingredients
  • 1 cup olive oil

  • 3/4 cup soy sauce

  • 1/2 cup lemon juice

  • 1/4 cup Worcestershire sauce

  • 1/4 cup Dijon mustard

  • 2 cloves garlic, minced

Directions

  • At least 4 hours before, portion out guacamole into ice cube trays.
  • Once frozen, cut them into 1/2-inch blocks.
  • Season beef with marinade mix.
  • Take 1/4 cup of beef, and form around guacamole cubes. It should make 18-20 balls.
  • Grill 2 minutes per side until well browned.
