Scotch Guac
We made a twist on Scotch Eggs with our Scotch Guac. Imagine a meatball stuffed with creamy guacamole. Yum!

2 pounds ground beef
1/3 cup marinade
- Marinade Ingredients
1 cup olive oil
3/4 cup soy sauce
1/2 cup lemon juice
1/4 cup Worcestershire sauce
1/4 cup Dijon mustard
2 cloves garlic, minced
Directions
- At least 4 hours before, portion out guacamole into ice cube trays.
- Once frozen, cut them into 1/2-inch blocks.
- Season beef with marinade mix.
- Take 1/4 cup of beef, and form around guacamole cubes. It should make 18-20 balls.
- Grill 2 minutes per side until well browned.
