Spicy Chicken Tortilla Chip Soup

2 tablespoons olive oil
1 container Crazy Fresh Chopped White Onion
1/4 container Crazy Fresh Chopped Jalapeños
1 teaspoon minced garlic
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon cumin powder
1 teaspoon dried oregano
1 can fire-roasted crushed tomatoes, 14 ounces
4 boneless chicken thighs, cooked and diced
4 cups chicken stock
1 cup corn kernels
1 container Crazy Fresh Black Bean Salsa
1 tablespoon lime juice
1 teaspoon salt
1 bag Crazy Fresh Gorilla Chips
Directions
- Heat olive oil in a dutch oven, and add onions, jalapeños and garlic.
- Sauté until the onions are soft.
- Add all the other ingredients, except salsa, to the pot, and stir to mix.
- Bring to a boil, and simmer for 15 minutes.
- Add the Black Bean Salsa, and simmer for 3 more minutes.
- Serve hot topped with Gorilla Chips and your favorite toppings.
