St. Patrick’s Day Charcuterie Board

St. Patrick’s Day is always a fun time to have an excuse to wear green, eat different Irish foods, drink green beer and just have a blast! Unfortunately, the holiday falls in the middle of the week, so the green beer just might not happen. But we have another great way you can celebrate, and that’s with a yummy St. Patrick’s Day charcuterie board!

Charcuterie boards are all the rage right now. They can be whatever you’d like them to be! Most people enjoy them with various meats, cheeses and crackers – basically as a fancy meat and cheese plate. But you can make it with desserts, with pancakes (yes, we’ve seen some mouth-watering breakfast charcuteries – look them up!) or with fruits and veggies.

We wanted to make a fun green food board with various healthy snacks to celebrate the holiday with. This board is perfect as an after-school snack for the kids, or as an appetizer or dessert platter. Either way, we think everyone is going to love this festive little board!

Step 1: Gather Ingredients

You’re going to want to head to your local grocery stores and pick up your favorite green snacks. Since we also wanted to make a rainbow, we made sure to pick up a couple of our precut fruits and veggies as well. These were the Crazy Fresh items we used:

We also picked up some other fun snacks like veggie chips and veggie straws.

Step 2: Assemble!

Find your favorite wooden cutting board, and start assembling! Lay out your fruits to make a rainbow. We found a cute little black pot to fill with mango chunks to use as the pot of gold at the end of the rainbow. We also placed our favorite pinwheels in the corner and topped them with guacamole (this is such a great snack!). Then, just fill in the rest of the board with your green snacks until there are no more empty spots.

This is also a fun step to get the kids involved. It definitely doesn’t have to look perfect, so let them place all their fruits and veggies on the board wherever they’d like.
