Sweet Potato Christmas Coins
Not every app has to use crackers as its vessel. Try using sweet potato coins! Top with guac and pom arils for this festive appetizer!

3 medium sweet potatoes
2 tablespoons olive oil
Pinch of salt and pepper
1 teaspoon garlic powder
1 container Crazy Fresh Authentic Guacamole
Directions
- Preheat oven to 425º.
- Wash sweet potatoes, and cut into 1/3″ slices.
- Drizzle olive oil onto a large sheet pan. Add potato rounds to pan with one side facing down to cover with oil, then flip and make sure each side is lightly oiled. Sprinkle with salt, pepper and garlic powder.
- Bake in oven for 40-45 minutes, flipping halfway through, until both sides are lightly browned and crispy on the edges. Let cool.
- Drain pomegranate arils and add 1/2 container to a bowl.
- Add entire container of guacamole with pom arils, and mix.
- Place 1 teaspoon of mix on top of each sweet potato coin.
- Garnish with more arils.
