This is an easy recipe for a healthy, paleo gingerbread – make with sweet potatoes instead of flour! This loaf is a great holiday dessert that is also gluten-free, grain-free and dairy-free!

Ingredients

  • 1 container Crazy Fresh Sweet Potato Chunks (using 450g)

  • 1/2 cup coconut flour

  • 1/4 cup coconut sugar

  • 1/2 cup molasses

  • 2 tablespoons coconut oil

  • 4 large eggs

  • 2 teaspoons ground ginger

  • 2 teaspoons pumpkin pie spice

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

Directions

  • Preheat oven to 350º. Spray your pan with non-stick spray.
  • Mince sweet potato chunks in a food processor until it reaches rice consistency.
  • Add the rest of ingredients, and combine until smooth.
  • Bake for 40-45 minutes until golden on top and a toothpick comes out clean.
