Sweet Potato Gingerbread Cake
This is an easy recipe for a healthy, paleo gingerbread – make with sweet potatoes instead of flour! This loaf is a great holiday dessert that is also gluten-free, grain-free and dairy-free!

1 container Crazy Fresh Sweet Potato Chunks (using 450g)
1/2 cup coconut flour
1/4 cup coconut sugar
1/2 cup molasses
2 tablespoons coconut oil
4 large eggs
2 teaspoons ground ginger
2 teaspoons pumpkin pie spice
1/2 teaspoon baking soda
1/2 teaspoon salt
Directions
- Preheat oven to 350º. Spray your pan with non-stick spray.
- Mince sweet potato chunks in a food processor until it reaches rice consistency.
- Add the rest of ingredients, and combine until smooth.
- Bake for 40-45 minutes until golden on top and a toothpick comes out clean.
