Sweet potatoes are such a versatile vegetable, and our pre-cut sweet potatoes make it super easy to make both sweet and savory dishes. This bread is great for both breakfast or as a snack. And it’s a great way to get your kids eating veggies!

  • 1 container Crazy Fresh Short Cuts Sweet Potato Chunks

  • 3 tablespoons water

  • 2 large eggs

  • 1/2 cup vegetable oil

  • 1/4 cup Greek yogurt

  • 1 teaspoon vanilla

  • 1 3/4 cups all-purpose flour

  • 1 1/4 cups granulated sugar

  • 1/4 cup light brown sugar, packed

  • 2 teaspoons baking soda

  • 1 tablespoon ground cinnamon

  • 1 teaspoon ground ginger

  • 1 teaspoon ground nutmeg

  • 1/2 teaspoon all-spice

  • 1/2 teaspoon cloves


  • Preheat your oven to 350º.
  • Microwave Crazy Fresh Sweet Potato Chunks per instructions on package, then mash.
  • Add eggs, oil, yogurt and vanilla. Whisk until combined, and set aside.
  • In a large mixing bowl, combine dry ingredients.
  • Pour the sweet potato mixture over the dry ingredients, and stir to incorporate.
  • Pour batter into loaf pan, smoothing the top with a spatula. Bake 60-70 minutes or until top is domed.
