Sweet Potato Soufflé Cups
Everyone loves the traditional sweet potato casserole for Thanksgiving dinner, but we’ve put a twist on it by making the dish into individual serving sizes. They’re such a yummy side dish everyone will enjoy!

2 packages pre-made phyllo dough cups
2 containers Crazy Fresh Short Cut Sweet Potato Chunks
1/4 cup light brown sugar
1/4 cup evaporated milk
2 tablespoons butter, softened
2 tablespoons Crazy Fresh Freshly Squeezed Orange Juice
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon orange zest
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
Pinch of ground cloves
3 cups mini marshmallows
Directions
- Preheat oven to 400º. Line a large baking sheet with foil.
- Spray 2-quart dish with cooking spray.
- Bake sweet potatoes for 45 minutes or until fork-tender. Cool, then mash until smooth.
- Combine mashed sweet potatoes with all other
- ingredients. Pour into prepared dish, and bake 40-45 minutes.
- Preheat oven to broil.
- Fill phyllo dough cups with cooked sweet potato mix, top with marshmallows, and broil until golden.
