Tortilla Chip Crusted Chicken with Queso

2 boneless, skinless chicken breasts
2 cups Crazy Fresh Gorilla Chips
1 1/2 teaspoons cumin
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1 1/4 cups all-purpose flour
1 teaspoon salt
2 eggs
1 container Crazy Fresh Pico de Gallo
- QUESO
2 tablespoons butter
2 tablespoons flour
2 cups milk
2 cups sharp cheddar cheese
1 can green chiles, 4 ounces
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon cayenne pepper
Directions
- Preheat oven to 425º.
- Crush 2 cups of Gorilla Chips.
- Put the crushed chips in a shallow dish, and combine with cumin, garlic powder and paprika. In another shallow dish, beat the eggs. In a third shallow dish, combine the flour and salt.
- Dredge chicken in the flour mixture, shaking off excess. Dip in egg mixture, and then dredge in crushed chips.
- Bake the chicken for 18-20 minutes, until golden brown and cooked through.
- While the chicken is baking, make the queso sauce. In a saucepan, melt the butter. Whisk in the flour, and cook for 1 minute. Whisk in the milk, and cook until slightly thickened, 3-5 minutes. Stir in the cheese, chiles and spices. Season with salt and pepper.
- Serve the chicken with a drizzle of queso and Pico de Gallo.
