Tortilla Chip Crusted Chicken with Queso

  • 2 boneless, skinless chicken breasts

  • 2 cups Crazy Fresh Gorilla Chips

  • 1 1/2 teaspoons cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1 1/4 cups all-purpose flour

  • 1 teaspoon salt

  • 2 eggs

  • 1 container Crazy Fresh Pico de Gallo

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 2 cups milk

  • 2 cups sharp cheddar cheese

  • 1 can green chiles, 4 ounces

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon cumin

  • 1/4 teaspoon cayenne pepper


  • Preheat oven to 425º.
  • Crush 2 cups of Gorilla Chips.
  • Put the crushed chips in a shallow dish, and combine with cumin, garlic powder and paprika. In another shallow dish, beat the eggs. In a third shallow dish, combine the flour and salt.
  • Dredge chicken in the flour mixture, shaking off excess. Dip in egg mixture, and then dredge in crushed chips.
  • Bake the chicken for 18-20 minutes, until golden brown and cooked through.
  • While the chicken is baking, make the queso sauce. In a saucepan, melt the butter. Whisk in the flour, and cook for 1 minute. Whisk in the milk, and cook until slightly thickened, 3-5 minutes. Stir in the cheese, chiles and spices. Season with salt and pepper.
  • Serve the chicken with a drizzle of queso and Pico de Gallo.
